Peacock mantis shrimp have not been evaluated by the International Union for the Conservation of Nature and Natural Resources, but are not considered endangered or threatened by any agency. ("The IUCN Red List of Threatened Species", 2013).
Just like any other species, we have to be mindful of how we are affecting species of animals with our own habits. In a lot of places in the world (even america) w eat Mantis Shrimp and we could potentially push species of Mantis Shrimp into extinction.

Mantis shrimp is an original Edo style sushi ingredient. The mantis shrimp has to be poached immediately after it is caught, since it starts to digest its own body after it is fished out of the water.
The mantis shrimp is poached in hot water blended with rice wine and salt for about 10 min. It is either served alone, or with a tusme sauce made from its own broth. Mantis shrimp is fine in texture and although does not have a sweet aroma, it has a deeper flavor than any other shrimp or crab.
